Galettes des Rois with Almond

Preparation time: 35 minutes 

Cooking time: 40 minutes 


Ingredients for 4 persons:

Puff pastry: 

  • 2 rolls of puff pastry  

  • 1 egg 

  • 1 egg yolk 

  • 1 tsp. tablespoon of water 

  • 1 bean 

Almond cream: 

  • 100g of ground almonds 

  • 12g of cornstarch or cream powder 

  • 80g of icing sugar 

  • 20g of almond milk 

  • 80g of butter at room temperature 

  • 60g egg 


  • 100g of water 

  • 100g of sugar 


  • Preheat the oven to 200 ° C. 

  • In a bowl, mix the softened butter, ice sugar, half the egg (omelette battered), half the almonds powder and the cornstarch.

  • Whip by hand then add the rest of the egg, the rest of the almond powder and finally the almond milk.

  • Book in the fridge. 

  • Mixe the egg, egg yolk and water.

  • Book it in the coolest. 

  • Mix the sugar and water into a pan, bring to a boil and reserve. 

  • Detail 2 circles of puff pastry 18 to 22 cm in diameter. 

  • On a pastry plate, place a sheet of silicone (or sulfurized paper), then a puff pastry, spread the almond cream.

  • Place a nice bean on the side of the almond cream.

  • Put down the second dough and weld the edges together.

  • Chicking the sides of the patty with a small paring knife.

  • With a brush, lightly do the top with the egg mixture.

  • Using the small knife, scratch the cake nicely. 

  • Bake for 15 minutes at 200 °, then lower the oven to 180 ° for 45 minutes.

  • After cooking, using your clean brush, spread a thin film of syrup.

  • Let cool down.
